(Organization) System Saturday- My Wedding Gift and Easy Chicken Pot Pie Recipe
When my husband and I got married 13 years ago, my mom gave us a wonderful wedding gift that I will treasure always! She collected favorite recipes from family and friends and bound them all in a recipe book for us. Here is the cover of our one-of-a-kind recipe book, definitely a labor of love:
Note: I have cut up already cooked rotisserie chicken that I get at Sam's/Costco and put this in the pot pie to replace the chicken breast. Sometimes, I put a pie crust on the bottom of the baking dish, filled the crust with the mixed ingredients and then put another crust on top. Oh so yummy (and lots of carbs too, which is yummy, but not very healthy!)
So here is my chicken pot pie when I got it out of the oven:

Included in the book are recipes organized by categories and she also included an envelope in each section so I could stuff any recipes I collected over the years in the envelopes. So clever! Thanks Mom for this special, organized way to keep recipes :)
One of the recipes in this book is from a family friend (Hi K.R. and family!) and I used to babysit her children when I was a teenager. We shared some fun times with this family before they moved away. Now these children that I babysat are grown, married, and having babies of their own! Oh, why is it that everyone else is growing older and I'm still in my 20s? Ha!
K.R.'s recipe that I use often is "Easy Chicken Pot Pie" and every time I make it, I think about K.R. and her family. So here is the recipe from my book:

What a great wedding present. I have a recipe book that was complied at a wedding shower of all of the guests' favorite recipes. I love it that I think of the person who gave me the recipe whenever I make a particular dish. The pot pie looks very good. I will have to try it!
